Miso soup is one of traditional Japanese soul home cooking.
Miso is made of fermenting soybeans with salt, Koji and sometimes other ingredients.
There are a lot of kind of Miso in Japan.
Shiro(White) miso is common in west Japan, Middle of Japan is common for Aka(Red) miso,
and it is common to use Awase(mixed) miso around Tokyo area and more.
I am familiar with Hatcho miso taste which is very strong Aka(Red) miso taste.
It is made of 100% soybeans.
The taste is thick.
Japanese people eat Miso soup quite often.
Eating miso soup every breakfast, lunch or dinner as side dish is pretty normal.
When I was a child, I didn’t like Miso soup so much but I am getting like it little by little.
My boyfriend did not like Miso soup but he said that he is getting used to Miso soup.
I eat Miso soup at least once a month in Germany.
Here is the recipe how to cook Miso soup.
For 3 portions
Ingredients
a.Dashi (Asian supermarket) 3g
b.Aka Miso (Edeka) 2 big spoons
c.Radish(Daikon) (Edeka) a half
d.Tofu (Asian supermarket) 200g
e.Green onion (supermarket) 3
f.Carrot (supermarket) 2
g.Water 400ml
How to cook Miso soup
1.Cut Radish and carrot to thin around 3mm
2.Boil water in a pot
3.Put 1 and Dashi into boiled water and make them boiled for 5 mins
4.Cut tofu and green onion and put them into 3
5.With low heat, put Miso and make them melt little by little with chopsticks
6.Make the miso soup a bit boiled for 1 mins
You can buy all ingredients for Miso soup at supermarket in Germany.
If you want to buy Daikon which is Japanese radish, you can find at EDEKA.
I tried 2 or 3 kind of radish like Daikon but they are also okay.
I like “Abura-age” (deep fried tofu) but I could not find it at any supermarket in Germany.
You can buy Abura-age at supermarket in Japan.
It is common ingredients for Miso soup.
Japanese people eat a lot of soy product.
Miso, Soy sauce, Tofu, Abura-age are made of soy.
Mushroom, potatoes, onion or any vegetables would be good in Miso soup.
There is Miso at EDEKA but there are a bit more kinds of Miso at Asian supermarket.
